Flour and Pasta BIO
It was an interview in October 2023 on the subject of organic farming that gave me the energy to undertake this new adventure... Pasta!
Our pasta is organic and made with grains
grown here on the farm on the Tuscan hills of these wonderful villages which are Guardistallo, Casale Marittimo, Montescudaio, Bibbona and Montecatini Val di Cecina.
The land, as organic farming wisely dictates, must be cultivated alternately, never stressed, so that it can give the best to the plants that grow there. Each plant gives and takes away something and
the alternation creates balance and respect for the Earth.
I come from the city and being able to eat what is grown and above all knowing how to grow it is an achievement that I wish for all those who one day want to return to cultivating the land.

The "Fattore", Ezio and, before him Vasco, and now the youngers Matteo, Federico, Nico, take care of these lands. It's November and they are out there sowing... From every grain sown an ear will be born which will contain many grains... The ears will be threshed next year, in July and, thanks to other artisans, people who love their work, the grains will be transformed, in an artisanal way, with the right times and temperatures, into what I hope you can appreciate today,
our pasta! The result of a whole year of our work... this is the magic of the earth.
It is not a pasta like the others, it has a soul, it has the energy of the people who created it...
Cooking
It desires a large pot, with lots of water, the right amount of salt, ...
it needs to be caressed, not stirred. The cooking times shown are accurate and I recommend following the instructions.
Short pasta has the great advantage of cooking in just 4 minutes, designed for those who want to eat healthy carbohydrates and have little time!

Organic pasta and flour from ancient Khorasan wheat – Triticum Turanicu
Khorasan wheat, botanically defined as Triticum Turanicum, is an ancient subspecies of wheat, selected by man more than 4,000 years ago in the Tūrān region, a large region of Asia between the Iranian plateau (once Persia), the Caspian Sea and the Kyrgyz steppe, in Persian it means
"where the sun originates".
A diet based on Khorasan wheat compared to other grains:
- has positive effects on cardiovascular risk (carotenoids, phenols, Vit. E) → an ally of the heart
- is particularly digestible thanks to its protein composition
- is rich in fiber, providing a high satiating power and usefulness on the symptoms of irritable bowel syndrome.
- has positive effects on insulin and blood glucose levels. Unlike classic flour, whose glycemic index is around 85 points, that of KHORASAN wheat is around 45 points.
- fights cellular aging thanks to a high selenium content, essential for eliminating free radicals
- has a high satiating power
- supports the functioning of the nervous system as it is rich in vitamin B3.
Khorasan wheat is cholesterol-free and helps fight "bad" cholesterol (LDL).
To all these benefits we add that it is an organic product
